I have made this cake many times and am still amazed at how quick this is to make (oh I should point out, that it is once you have boiled the oranges for two hours....but that`s no biggy). Everything gets tossed into the food processor, zapped and poured into the cake tin. Yes, it`s that simple! This cake is a favourite in my house particularly with my youngest son. I have to say that he is now 22 years old and moved out, down to Leeds with his Girlfriend. So why do I still get the urge to bake him this cake??? I know it`s strange to say a cake can stir nostalgic feelings but that is what happens.....mmmm how funny.
I can truly say that I don`t even feel guilty making or eating this cake as it is made with whole oranges, ground almonds, cocoa, and eggs. Yes there is sugar in it but HEY! no butter or flour. I absolutely adore this cake. It has a dense, squidgy, velvety feel and the taste is exactly what it says on the tin. I feel priorities in cake making are very subjective. Some people like very fancy looking cakes with high class decoration and some are more about the taste. For me its all about the flavour and texture.
Well I now feel that I deserve a long soak in the bath. A work colleague gave me things called bath tea bags....have you ever! They smell Beautiful. I think i`ll try the Lavender, Patchouli and white tea.
Do you know I never had a bath for years when we first moved into this house because the bathroom was horrible, so I had showers all the time. But since the bathroom renovation I lie and soak, keep topping up the hot water, read a book and maybe have a little tipple. Heaven. I urge anyone to invest in a bath board. I love it! I may tell you all about my bathroom renovation soon. Hope you`re interested.
